Gambas

Gambas is a Spanish seafood dish with a tomato based sauce. The garlic shrimp goes so well with this sour Spanish tomato sauce.

Spanish Tomato Sauce

Ingredients

  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 1/2 cup onion, finely chopped
  • 1 cup tomato sauce

Method

  1. Saute garlic and onion in olive oil.
  2. Add tomato sauce and simmer gently for 45 minutes to 1 hour.

Gambas

Ingredients

  • 1/2 kg medium sized fresh shrimp, shelled and deveined
  • 5 cloves garlic, finely chopped
  • 1/4 cup olive oil
  • dash of hot chilli sauce
  • 1 tbsp lemon or calamansi juice
  • 1/2 cup white wine
  • 2 tbs Spanish Tomato Sauce
  • 1 – 2 tbs arrowroot powder
  • some green olives to garnish

Method

  1. Brown garlic in olive oil. Cook shrimp until pink.
  2. Add lemon juice, wine, hot chill sauce and Spanish Tomato Sauce. Cook for a minute.
  3. Thicken with 1 – 2 tbs arrowroot powder and enjoy on a bed of broccoli, cauliflower or quinoa etc.
