Paleo Paella (prawn, chicken and chorizo)

Another amazingly tasty Latino inspired dish with a pale edge to it. The colour of this dish is absolutely amazing and the smells that fill the kitchen will have anyone in the house excited for the upcoming meal. This recipe is made for a big family of boys so halve it if you’re only making for yourself or a small group of people. You will need a large frying pan or even better a paella pan!


  • 15 fresh prawns, peeled, deveined, tails on
  • 1 large free range chicken breast, diced
  • 1 large chorizo, diced
  • 1 head of cauliflower, broken into florets
  • 1 brown onion, chopped
  • 1 red capsicum, chopped
  • 1 long red chili,chopped
  • 6 garlic cloves, chopped
  • 2 tsp sweet paprika
  • 2 tsp smoked paprika (or use all sweet)
  • 1/2 tsp saffron powder or a few saffron threads (optional)
  • 1 lemon
  • 1/2 cup white wine
  • 2 tbs tomato paste
  • 1 cup chicken or vegetable stock
  • ghee for cooking meats
  • extra virgin olive oil
  • sea salt
  • black pepper
  • spring onion, chopped for garnish


  1. Make cauliflower “rice” by chopping it up into small pieces or chop it into chunks and give it a whizz in a food processor.
  2. Heat ghee to a medium-high heat in the paella pan (or large frying pan) and cook the chorizo on both sides until brown and crisp. Remove from pan and set aside. Repeat for the prawn (30 seconds each side) and chicken (until brown on all sides) removing each one as they’re cooked.
  3. Reduce heat to medium and add 3-4 tbs olive oil. Cook onion, red capsicum and chilli for a couple of minutes.
  4. Add saffron, paprika, garlic and a pinch of sea salt, mixing, to caramelise the ingredients.
  5. Add the white wine and let the flavours infuse for 30 seconds. Add tomato paste and stock then reduce heat to low and let it simmer until the capsicum and onion have softened and the sauce has slightly thickened.
  6. Next mix in the cauliflower & chicken, adding in a little more olive oil and mixing the ingredients together.
  7. Finally add the prawns, chorizo and squeeze lemon juice over the paella and give it a good mix. Add in salt and pepper to taste.
  8. Plate up and garnish with spring onion and enjoy this amazing meal.
