Get your taste-buds tingling with this delicious, vitamin C packed salad. Perfect with some grilled salmon or white meat.
- 1L cherry tomatoes, halved
- 1 small shallot, minced
- zest from 1 orange
- juice from the lemon you just zested
- 1/3 cup olive oil
- 1TBS red wine vinegar
- 2TBS fresh basil, chopped
- 1 bag of fresh rocket
- salt & pepper to taste
- Place tomatoes in a large bowl with minced shallot and orange zest.
- Use a potato masher to mash the tomatoes so they release some juice (don’t go too crazy)
- In an old jam jar combine the liquid ingredients and shake.
- Pour over the top of the tomatoes and dress with basil, salt and pepper.
- Toss and serve!
